Summer salad with garlicky spaghetti

My best friend Nicole has three kids and a hungry husband, so when she says she’s got a crowd-pleasing recipe I trust her. She sent me this one via text and I made it tonight for M, kids and his parents. It was bowl-scraping good.

Garlicky Spaghetti

Serves 4 (I doubled it)

Ingredients:

  • 9 garlic cloves, minced
  • 1/2 cup olive oil
  • 1 15 ounce can crushed tomatoes
  • 1 pound spaghetti, cooked according to package directions
  • 6 Tbsp. butter (Earth Balance)
  • Chopped basil for garnish (optional)

Directions:

Heat olive oil and garlic in a small pan over low heat for 30 minutes. Stir occasionally to make sure garlic doesn’t burn. Combine crushed tomatoes and butter in another pan. Heat over medium heat until butter is melted. Stir olive oil and garlic into tomatoes. Cook over low heat and let the flavors meld together for at least 10 minutes.
